Squash Sundays🤸🏽‍♀️ Cooked 1/2 for me and 1/2 for my husband👫 Easiest and yummiest frickin thang ever! Added cooked sausage, onions, and sauce in the squash boat and went to town! 🤤 DIRECTIONS: 1. Preheat oven to 375 degrees F. Lightly oil a baking sheet or coat with @chosenfoods avo oil spray🥑 2. Cut the squash in half lengthwise from stem to tail and scrape out the seeds. Drizzle with avocado oil and season with pink salt and organic pepper🤘🏼 3. Place squash, cut-side down, onto the prepared baking sheet. Place into oven and roast until tender, about 35-45 minutes😏 4. Remove from oven and let rest until cool enough to handle😌 5. Using a fork, scrape the flesh to create long strands of "spaghetti" 🤤

Happy Sunday Funday! It's been raining so much in Southern California since the beginning of the year that I feel like I'm living in a state known for being wet! 🌧 But to help with overcoming the rainy day blues, I got to fantasize about living the island life by making coconut shrimp for Aruba! This is probably one of the easiest dishes I've cooked but so so so good! I fried them in coconut oil so it took a couple of batches to get the right temperature and I served it in an empty coconut! 🇦🇼 #eatlotsbehappy

Perfect Sunday #brunch before running errands and hitting the farmer's market 👩🏼‍🌾🍃🍳🤗 my gfs & I made pesto scrambled eggs topped with @traderjoeslist hot pico de gallo + @angelicbakehouse sprouted 7-gain toast topped with @organicvalley pasture-raised cream cheese & citrus rosemary seasoning + a chopped salad made with powder greens, cherry tomatoes, red onion & mushrooms tossed in TJ's Greek olive oil with lemon juice, sea salt & pepper ✨ getting a late start to the day {which I hate 🙄} because I slept in sooo late.. honestly the latest I have in years 😳 but I feel so good & recharged today, so my body definitely needed it 😴🙌🏼

Food just looks better when it's handheld 😂😂 . . . . Spicy butternut squash and coconut milk soup with candied maple-roasted seeds, blood orange segments (the superior orange, let's be honest 💅💅) and coconut flakes! ☺☺ Love the mix of winter and summer 🌞❄ reminds me of the weather this weekend...
Sunday cool blustery beach vibes and intense fresh flavors with warm aromatics, livened up with bright herbs, sweet shrimp and my left over gut healing bone broth! Super easy, healthy, totally real, and sincere, I mean what other soup has your back like that? PHO Sho! 😜🍜👌🏽 Spicy Shrimp Pho (made with bone broth) 8oz (I used) Lotus Food forbidden rice noodles, or thin rice or pad thai style noodles 2 tbs sesame oil 2 tbs ginger root grated or minced 1 tbs chili paste (or to taste) 1 tsp ground coriander 2 cloves minced 8 cups chicken bone broth or Chicken broth low sodium 2 tbs Braggs liquid aminos or low sodium soy sauce 2 tbs fish sauce 2 tbs fresh lime juice 2 tbs hoisin 1/4 tsp ground black pepper Baby bok choy thinly sliced & leaves roughly chopped 1 lb raw shrimp, cleaned, shelled and deveined Garnishes thinly sliced green onion slices jalapeno fresh chopped cilantro lime wedges hot chili paste or sriracha bean sprouts The deal; Make your rice noodles using package directions and set aside. In a large pot on med heat, warm sesame oil, 30 -60 sec. Add ginger, chili paste, ground coriander, and garlic. Stir for 30 seconds to release flavors. Stir in chicken broth, soy sauce, fish sauce, lime juice, hoisin and black pepper. Bring to a boil add baby bok choy then add shrimp. Simmer until shrimp turns bright pink, about 3-4 minutes. Adjust flavor to taste by adding salt, pepper or soy if needed. Add rice noodles evenly to four large bowls and pour in soup. Garnish with your faves! Xo Missy
